As a die-hard gourmet and lover of well-executed fusions, I must say that Paru not only met but exceeded my expectations. From the first bite, it's clear that there's no improvisation here: Nikkei cuisine is presented with subtle elegance, respecting tradition but with creative touches that awaken the palate.nnI tried the salmon tiradito with passion fruit and yellow pepper: a fresh, citrusy touch, balanced to the millimeter. The sushi was impeccable. Each piece had the perfect temperature, texture, and proportion. I especially recommend the Paru roll: an explosion of umami, sophisticated but unpretentious.nnThe pairing was another success. The wine list is precise and well curated, and the sommelier knew how to interpret my taste with elegance. The service was attentive but discreet, as it should be in an experience of this level.nnThe atmosphere was perfect: dim lighting, music perfectly balanced, and minimalist but warm decor. Everything invites you to stay for a long time, celebrating the pleasures of a good meal.nnParu is not just a restaurant: it's a sensorial journey with a taste of well-experienced luxury. I will return to BAS, and without a doubt to Paru.

Tasty food, lovely ambiance, good service. But the place's policy of seating us next to another couple at a row of small tables, even though the place was almost empty on a gloomy Monday night, is inexplicable.
